About How The Coffee Is Produced : From Our Heritage Estate To Your Cup
Our coffee is different from those on the market for a variety of reasons. One of the ways we are highly unique is how we process our beans. Upon harvest our beans are sun fermented for several weeks with the coffee berries bright red fruit flesh still on allowing sweet honey from the fruit to soak the raw coffee beans before milling where most all other coffee on the market has its fruit flesh washed off and milled immediately upon harvest to get their beans cheap and fast to market.
We also use zero water in processing our coffee because of our unique sun drying method where industrial farms produce massive amounts of water waist in de-pulping often in third world countries where water security is strained and scarce.
The farm is also a beautiful pristine and protected jungle and wildlife sanctuary. In fact two birds that were previously thought to be extinct were found recently on our farm further proving how important it is to preserve natural habitat. The diversity of trees and vegetation intermixed with the coffee trees also provides rich soil and nutrient dense conditions.
The farm is also a high elevation volcanic farm making our beans of better quality by higher altitude and moist fog while most coffee farms grow in flat rows in open fields for machine harvest access.
Our coffee also involves zero brokers or middlemen of any kind so you can be assured you truly are buying from us the farm! From preserving our 200 year old seeds all the way to how we perfect manufacturing our coffee pods in our roasting facility, it's one company, one family from farm to your cup!
And finally all of our coffee is hand picked, no machines, and we are a multi generational family estate certified heritage, now over 140 years old, and fully organic including zero plastic usage with several awards for quality and heritage. It starts with the bean.
We specialize in growing and fermenting techniques that aim to produce the best possible coffee beans in the world. We taste our roasts over and over again to extract the most incredible natural flavor notes and aroma that our beans have to offer.
We also use an old and rare form of fermentation in which we leave the red fruit flesh of the coffee berry on while the bean ferments. This soaks the bean in a natural sweet honey that results in highly desirable award winning beans with incredible mouthwatering flavor.
Whether it be dark chocolate flavors or woody cedar aromas, we use the beautiful high altitude acidity to tap into different experiences and roast to draw out the flavorful oils within the beans.
