MOST ALL COFFEE IS PRODUCED BY INDUSTRIALIZED CLEAR CUT FARMS THUS THE FRUIT IS WASHED OFF IMMEDIATELY UPON HARVEST USING MASSIVE AMOUNTS OF WATER IN LARGE POOLS TO GET THE GREEN BEANS TO MARKET AS FAST AND CHEAP AS POSSIBLE.
OUR ESTATE USES OLD TRADITIONAL FERMENTATION PRACTICES. WE LEAVE THE COFFEE FRUIT ON THE BEAN FOR SEVERAL WEEKS TO BAKE IN THE SUN LEAVING THE NATURAL FRUIT HONEY TO SOAK INTO THE BEANS USING ZERO WATER AND 100% SUNSHINE. THIS PRACTICE RESULTS IN THE HIGHEST COFFEE RATINGS BEANS CAN ACHIEVE.
