A Legacy In The Making

Since 1885 our rare heritage estate has specialized in sun fermented strictly high altitude micro-climate coffee that produces highly prized complex well balanced anti-oxidant rich coffee. We attain high ratings in coffee standards and bring all of this to you direct from the estate. From planting the seeds to packaging the coffee pods, we do it all from A to Z. No brokers, middle men or co-packers, it's truly just us.

In 1880

In 1880 our Great-Great-Grandparents traveled from Spain to New York to Nicaragua. Eventually standing on the peak of a volcanic mountain in a thick hot tiger filled jungle in the heart of Central America, they looked out at the vast land they had just purchased imagining to build one of the largest coffee estates in all of the Americas right before the first global coffee boom.

A large ship anchor still lies on the farm today, once taken up to this extremely high elevation by only horse and carriage from the ocean. A gift from our great-great-grandfather to his wife as a testament of their strength together, it is inscribed "you are my anchor". Strong family unity and loyalty to long term relationships is a founding principal of our success and resilience over the years. We are committed for the long haul.

The commercial business is named after our great-grandfather 'The Generals Cup'. A military general who fought through two civil wars against tyranny and with particular actions of his wife miraculously saved the coffee estate after having lost everything else.

He just passed away in January of 2026 at the age of 104. It was his personal dream to see the farm export its own coffee. And his fathers dream as well. Today, the company has become much more. In their great memories we have built 'The Generals Cup' in Canada as an extension to the coffee estate.

Every cup is embedded with this great legacy full of distinguished character, unimaginable courage and passion for living greatly.

Heritage Coffee Farming

Our award winning coffee beans are harvested and dried in a very different manner than most on the market today acquiring a specialty rating categorized as "natural honey" type. Ripened coffee berries are picked by hand (unlike industrial farms which use machines) and these "wet sacks" of coffee berries are spilled out onto large screens to ferment in the sun for a period of several weeks being constantly rotated and wrapped.

This process allows the fruit flesh of the natural coffee berry to soak the inner coffee bean with nutrients and rich flavors from the natural honey of the fruit. Most coffee on the market today is a "washed" type. This means the beans are immediately stripped upon harvest using massive water pools and immediately taken into machine drying and milling.

Not only does our heritage fermentation process produce a higher quality coffee, it also requires zero water waist (which is significant with industrial "washed coffee" types).

Our beans are also certified SHG or "Strictly High Grown" which simply means they are grown at a significant altitude as our estate is situated on an active volcano.

Coffee Milling Begins Here

The estate has a historical milling facility aimed to facilitate and support the processes involved in preparing the finished raw green coffee product for international shipments.

We do not have the typical massive water pools commonly seen in the production of green beans because of our sun drying process. Due to the fact that our harvesting and processing methods are entirely dry, we do not waist the enormous amounts of water that washed coffee types use.

Beans are Hulled, Screened and Dried Again

Screening For Perfection

After hulling the dried berries we extract the inner coffee beans. We place the beans on the green screening plates and vibrate them at a high velocity to remove any final residue or stones. Once the beans are screened they go for one final dry in drying drums until they reach the desired humidity level for bagging and ocean transportation.

Traditional Burlap Sacks Without Plastics

Once the final green coffee beans are ready for shipment we bag them in traditional burlap sacks.

Most all green coffee today uses plastic bags inside the burlap, but not us. We choose to go plastic free and stick with the original natural materials that the coffee industry started with.

Breathable, fresh and natural. Leaving no plastic garbage to end up on the streets or landfills of either nation.

Another detail that is unique about our finished bags is the size. While most all green coffee is sold in 150 Lb sacks, we keep ours at 100 Lbs as it is much easier to carry and easier on the people that have to load them, unload them and use them for roasting.

Ocean Transportation

Because of the nature of our commodity, we ensure the ocean container is fully lined before loading our product. This prevents any smells or contaminants from touching the product as well as absorbing any humidity.

Once loaded and picked up for transport the container enjoys a quick trip up the Pacific coast of the Americas all the way to Canadas Vancouver ports for processing.

The BC Roasterie

Roasting ones own farmed coffee beans is a highly unique experience. An entire multi-generational history of information about our regions, species, farming and harvesting provides us with an intimate understanding of what roasting applications work best for our beans.

This specialized knowledge allows us to become highly focused on making our specific coffee the absolute best it can possibly be. We are able to ensure that what we are receiving in the roasterie is the utmost highest of quality our estate is able to produce.

We also have a more expansive influence over the roasted coffees quality of outcome and final roasts because we are able to go back to the farm and adjust things as needed to enhance and perfect the roasts on the roasting and packaging side.

Lets Get the Fire Going

Roasting coffee beans is perhaps one of the most naturally aesthetic forms of manufacturing there is.

The flames, the smoke, the heat, the smell, the churning drum, the glass peep hole, the testing spoon, the appearance of the beans, the sound of them cracking inside and the outpouring of this golden rich colour with an oily shine into the revolving cooling tray below. You can dip your hands into the beans as they cool and feel the rich warm earth they come from.

It's an experience that far to many coffee lovers have never witnessed. Thankfully you get to have a little piece of this every morning in your favourite cup.

Roasted Coffee

Legacy Light Roast

A delicate yet expressive cup, this legacy light roast opens with a fragrant aroma of wildflower honey and ripe stone fruit. The cup is bright and silky, revealing flavours of golden apple, peach, and mandarin, layered with gentle notes of caramelized sugar and raw honey sweetness. A soft floral nuance and a hint of cocoa linger in the finish, balanced by a clean, refreshing acidity and a smooth, tea like body. A brighter more lively roast for the more experienced brewer.

This medium roast offers a richer and more rounded expression while preserving its natural honey character. The aroma is warm and inviting, with notes of baked apple, toffee and roasted nuts. On the palate, flavours of caramelized peach, dark honey, and milk chocolate unfold, supported by a gentle citrus undertone. The body is smooth and creamy, with a mellow acidity and a lingering finish of cocoa, spice, and soft brown sugar, a mild sweetness.

A bold and deeply aromatic cup. Intense aromas of molasses, dark chocolate, and toasted sugar rise from the brew. The flavour is rich and full-bodied, revealing notes of burnt caramel, cacao nibs, and roasted almond, complemented by a subtle smokiness and hints of dried fig. The natural honey process lends a lingering sweetness beneath the roast, finishing smooth and powerful with low acidity and a long, bittersweet cocoa aftertaste.

We couldn't truly call ourselves an A to Z company if we didn't fill and seal the pods and retail boxes in house.

Why the focus on pods? The market simply wanted them. We listened. Once we started to use them ourselves, we could see why they were so popular.

The individual seals of the pods also allowed for freshness to be sealed in. The built in filters also ensure a silky texture free from any coffee grinds or residue.
